Nicole’s Lemon Butter Cake

One of my favorite friends, Nicole, loves a cake from a restaurant we frequent.

The name of the restaurant – Chefusion, in Green Bay, Wisconsin.

The name of the cake – Lemon Butter Cake.

She orders it almost every time, with me asking a million questions; What is the texture? consistency? flavor?

I finally got up the courage to attempt a healthy version, and it turned out pretty close.

I guess mine is not as sweet as the original, so feel free to add additional sweetener.

I love my version so much, I just couldn’t change it.

It is so rich, with the butter and lemon combination, and the texture is super moist.

The night I made this cake the first time, Nicole went to Chefusion.

I made these as larger cakes and mini cakes. The only difference is cooking time.

I have gotten so many compliments! If you like lemon, these are a must try!

Do not be afraid of zesting (I was), it is so easy.

Nicole’s Lemon Butter Cake

ingredients

  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 2 T coconut flour
  • 1/4 tsp salt
  • 1/3 cup dry sweetener of choice
  • 1 tsp baking powder
  • 1/2 cup unsweetened milk of choice
  • 2 T cashew or coconut butter
  • 6 T melted butter
  • 1 tsp vanilla extract
  • 1/2 T lemon zest
  • 4 T lemon juice
  • 1/4 tsp lemon stevia drops (or more lemon juice and dry sweetener)

instructions

  1. preheat the oven to 350 degrees and grease 4 ramekins or a mini muffin tip that makes 24 mini muffins, with coconut oil
  2. in a small or medium bowl combine the flours, salt, sugar, and baking powder
  3. in a stand mixer bowl with whisk attachment, combine the milk, butters, vanilla, lemon zest, lemon juice, and lemon stevia until frothy
  4. add the flour mixture, and whisk until combined very well
  5. pour batter into prepared dishes
  6. bake for 25 minutes if making 4 ramekin or bake for 15 minutes if making mini cakes
  7. best eaten warm. store in the refrigerator if not eaten right away and microwave for a few seconds.
